PUMPKIN SEED DATE PROTEIN BARS
These tasty little treats are one of my favorite go to sweets that actually are good for you. They can be made in five minutes flat, you only need a food processor and they have only 5 ingredients. Dates are considered a high glycemic fruit/sweetener, but hey are easily processed by the body. This recipe keeps the sugar in check with a good amount of cinnamon (a blood sugar stabilizer), perfect for post gym or pre cycle!

METHOD
Makes about 6 bars
NEEDS
A Food Processor or Mini Prep
Cutting Board
Sharp Chef Knife
INGREDIENTS
8 large pitted dates, chopped
2 tablespoons of raw stone ground pumpkin seed butter
2 tablespoons of raw stone ground almond butter
1 cup raw organic almonds
1 1/2 tablespoons of cinnamon
1/2-1 teaspoon of salt (I like them really salty!)
OPTIONAL
whole pumpkin seeds
sunflower seeds
These can create a nice crunchy texture. I personally like mine smooth, but my mom likes nice crunch.
Preparation:
Add the dates, almonds and butter to the food processor and pulse. Once it starts to take the form of batter, add the salt and cinnamon. If you decide to add the whole seeds, stir them into the batter at the end.
On your cutting board, place the dough and flatten out. You can them cut them into squares. I also sometimes make these round. Just roll and serve! They taste best chilled.
