We're thinking that tomorrow is a day for the most perfect gluten free banana pancakes ever. Yep, fluffy, sweet, a little crispy and totally healthy. This recipe has a vegan version as well as one with egg.
WHAT YOU'LL NEED
makes 4 to 6 pancakes that are about 3 inches wide/round
1 tablespoon of coconut oil or ghee for oiling the pan
1 tablespoon coconut oil for mix
2 whole eggs or 2 flax eggs
1 medium banana
1/2 cup gluten free oat flour
1/4 cup coconut sugar
1 to 2 tablespoons buckwheat flour (just grind buckwheat grouts in your vitamix until flour forms!)
1 tablespoon almond flour
1 teaspoon cinnamon
1/4 teaspoon baking powder
1/4 teaspoon sea salt
Oil your skillet and let it warm. Throw a little water on it and when it dissipates, your pan is ready!
In your vitamix or high-speed blender, blend coconut oil egg or flax egg, banana, oat flour, coconut sugar, buckwheat flour, almond flour, cinnamon and salt.
Pour into pan and heat until the bubbles start to pop, then flip. About 2 minutes on each side.
Enjoy with berries, banana and almond butter.
